Over Roasted Whole Chicken

Time: 1 hour & 25 mins


  • 1 Whole Chicken 3-4lbs
  • 3-4 cups chopped vegetables (carrots, potatoes, and onions)
  • 4 tbsp olive oil
  • Aguilar’s Chicken Seasoning



  • Pre-heat oven to 450 degrees.
  • Wash and chop vegetables. Place in casserole dish or sheet pan, and drizzle 2 tsp of olive oil and seasoning of your choosing on veggies. (Salt & Pepper)
  • Rub outside of chicken with remaining 2 tbsps. of olive oil and season with Aguilar’s
    Chicken Seasoning.
  • Place the chicken breast side up on the vegetables and place the pan in the oven.
    Cook for 12 minutes at 450 degrees.
  • Turn oven down to 350 degrees and bake until inner thigh reaches 165 degrees. (a 4lb
    chicken will need an additional 75-80 minutes)
  • Remove the chicken from the oven and allow to rest for 15 minules before carving. (Return veggies to the oven if they need a few more minutes cook time)
